Can't cook Japanese without it
The basic stock for 1,000s of Japanese recipes, dashi is absolutely essential for anyone wanting to cook authentic Japanese cuisine. As famous chef Shizuo Tsuji once said " "many substitutes for dashi are possible, but without dashi, dishes are merely a la japonaise and lack the authentic flavor".Dashi can be made pretty easily from scratch, boiling some kombu or katsuobushi shavings, but you often make far more than you need for the particular recipe, and it can be a pain to spend all that time boiling. Instant dashi does the trick just fine, and almost no one will notice the substitution. This kind here, "Hon Dashi" (meaing "Real Dashi"), is the cream of the crop of instant substitutes. Made by the company Ajinomoto, Hon Dashi is absolutely brimming with umami, the fifth basic flavor found in Asian cooking. Hon Dashi is made from katsuobushi shavings, so it is a basic fish stock and not suitable for vegans, who would probably want to make their own kombu stock...

Just what my miso was missing
My best friend returned to Japan and I felt that unless I went to a Japanese restaurant, I would never, ever have real miso soup.I tried every paste, every color. I tried making my miso with and without wakame; I even tried mixing the pastes and still could not get it right.I FINALLY got it! I didn't even intend to order Hon Dashi, had it on my wish list, but it was the best mistake I could make.I'll be experimenting with my dashi to see what else I can add it to. Ajinomoto Hon Dashi
I buy this locally in a much larger box but it is the same product. This product is just as good as making your own, which I did for years before finding it. The larger box has 1,000 servings but that is for a weak dashi so I use double the granules. For this product with the 3 packets, just add them into a small jar and use 1 ts per cup hot water (adjust to your tastes). That adjustment is why it says '3 to 6 cups'. Also, this product stores with no loss in flavor in a sealed container for years. I actually have some in a salt shaker (with rice to keep it dry) and use it commonly as a flavor boost to vegetables (green ones especially work well with it).This is actually a good starter size box. The Missing Ingredient
This really is the missing ingredient to all of your attempts at making traditional japanese food! It may seem odd that fish is used as a "spice", but it really almost is just that. I tried making steamed japanese vegetable with mirin & soy sauce figuring that Mirin was the missing ingredient. But it wasn't until I read on one of the packages that hon dashi is required, that I discovered the true missing ingredient! I bought fresh miso to make miso soup, and it too didn't taste right. Added a spoon of hon dashi and suddenly I had real Miso Soup! (actually i found out later you can buy fresh miso for miso soup with the dashi already added) Hon dashi is great for soup stock for udon or soba too. Buy some and add a little to whatever doesn't taste quite japanese enough.

Good but read carefully
After buying some fresh organic miso at a local supermarket the search for dashi stock for miso soup led me here. Having tried it (1/2 tsp stock + 2 tbsp miso + 2 cups water) it was pretty good but I am subtracting one star for the salt and MSG content which is considerable in this product. While this will be good for those in a pinch I think I might opt to try making my own stock with shaved bonito so I can axe out the salt and MSG.

Good sized flakes, tastes great.
Yes, my cat loves this stuff. That's besides the point. Really, this is not meant to be cat food. I put this on my rice, my ramen, my tofu, etc. and I eat it. This can also be boiled to make a fish stock, although it doesn't really give a super strong stock unless you use a lot of the flakes. The flakes are very meaty, taste mild and very good. For those of you who don't like fish, this isn't for you. However, you probably have had bonito fish stock if you've had miso soup before. I love this stuff. I set aside a small batch for my cat because he loves it too and it's a great treat for both of us that is not salty, preservative laden, or fatty.tl;dr: Great taste, can be used as a healthy alternative to cat treats, but it's really meant for human consumption.

Pretty decent
This is a huge bag of fish flakes, and it's the best deal I found on them. I'm not very experienced with katsuobushi, but I think these Marutomo fish flakes taste fine. You should be aware that these flakes, while appropriately thin, are quite large. They are probably not the best for sprinkling on as a condiment, but they work fine if you're using them to make dashi.I was expecting to store them in a canister in my pantry, but the instructions recommend putting them in the refrigerator after opening the bag. It turns out that I don't have a canister big enough, so there is now a huge bag of fish flakes taking up room in my refrigerator. The bag isn't resealable, so I have it closed with two clothespins. I estimate the volume is about two gallons, so I'm going to look for an airtight pail that will hold them.If I end up using these a lot, I would order them again. Great Seaweed !
Kombu is a wonderful energizer, especially during the summer and in the cold and flu season.Drop one strip into boiling water for 2 to 3 minutes, remove and cut into smaller pieces. Add to 6 cups of water, then add 12 teaspoons of shiro Miso (mild white miso), heat and stir until miso dissolves. Avoid boiling the ingredients. Add cubed tofu (soft is best), spinach or swiss chard cut into thin strips, shiitake mushrooms cut in thin strips and scallions thinly cut including the green part (reserve half for soup garnish). Heat, but do not boil, for about 10 minutes. Servie with a splash of soy sauce for a little extra flavor.The Kombu has a very mild flavor and best if not overcooked or over softened. Great for vegans and better than chicken soup!Enjoy !

soup not salt
I've searched through many a local supermarket in many a Chinatown, and this is the dashi that I default to. If you look at the ingredients, you'll see that the first ingredient is bonito flakes and the second is mackerel flakes. Salt and MSG aren't even on the list. What you get is a real fish based dashi flavor instead of the salty liquid that you get with just about every other product. This lacks all of the salt and MSG that you may be used to, so be prepared for a more delicate, subtle flavor. This is what you use when you want real flavor.The packages come in individual packets made of what appears to be cheesecloth. It's not a powder or a mix. It's actual fish flakes. The whole packet looks quite a bit like a giant teabag.Why did I drop a star? It is rather pricy, but you get what you pay for. This price is very similar to what you'd find in a real Asian supermarket. Also, it's tough to buy 50 packages of dashi unless you use it quite often...
